Creamy Cauliflower and Meaty Chunks

 Ingredients:

Cauliflower rice- Aldi has great choices for cheap! I use two bags, so I have leftovers for lunch.

1 block of cream cheese.

Meat Chunks can be ham, chicken, shrimp, and kielbasa sausage. (Really any meat you so desire.)

How to get this meal ready to eat. Super easy…..butter or spray your pan and add in your cauliflower rice until no longer frozen. Next you will add in your meat….if raw cook in a separate pan and then add it to the cauliflower rice. Next you will put in small chunks of the cream cheese, until the entire package is used. Stir it around until cream cheese is melted. I like to add Parmesan cheese to the top and serve it up!

I will start off by saying that I have had a pretty decent life. I have been blessed abundantly, but there have been dark times too. I am 35 years old and I have always been overweight. I came into the world at 9 pounds and 8 ounces, and have carried excess weight since birth, lol. I got as big as a size 28 and until I was getting a divorce, did I really push to lose weight. Being overweight isn’t fun, and I have no one to blame but myself and a little credit given to PCOS. I am not lazy all the time, and I don’t shove my face full of sweets all the time, but I also don’t try all the time. It’s easy to fall into the same routine, the one that you don’t have to push yourself to be the best you can be. The routine that is easy….the one that doesn’t make you sweat or miss out on the seemingly delicious foods. I have never had issues with my blood pressure or been diagnosed with diabetes, but I also know that I could be if I continue to live like wearing this extra weight isn’t a big deal. I know it is! 2020 is the year that I do for me. That I do for my future with my husband, kids, family, and friends. I deserve to walk into a store and not have to worry about clothes fitting me. I deserve to not have to get off a roller coaster ride because the dang latch won’t click. I deserve to be the best me I can be and if this means that I have to chose a different lifestyle (Keto and exercise) then it’s on!
